Peel back the paper-thin rind of a ponkan and the first thing that greets you is a crescent of plump vesicles-tiny moon-boats lined up in perfect formation, amber beads brimming with captured sunlight. Separated by diaphanous membranes, they yield at the lightest pressure; juice explodes from countless oil glands, releasing a citrusy perfume that is at once crisp and honeyed, instantly awakening the palate.

These miniature "juice bombs" are the end result of glandular cells that have spent months photosynthesizing, condensing sugars, acids, and volatile aromatics into a single fragile wall. In every ten grams of vesicles hide six grams of titratable acid and seven grams of sugar, balanced at a golden ratio of 0.85. The sweetness is rounded, the acidity bright but never sharp.
